2 cups all-purpose flour

1 teaspoon baking soda

3 medium ripe bananas, mashed (about 1 cup)

4 oz. dark chocolate (60% cocoa), melted and cooled slightly

4 oz. unsalted butter softened to room temperature

2 cups sugar

1/2 cup sour cream

2 large eggs

2 teaspoons vanilla extract


1. Preheat the oven to 350 degrees F. Grease two 9-inch cake pans with butter or cooking spray, then line the bottom of each pan with a round piece of parchment paper cut to fit.

2. In a large bowl mix together flour, baking soda, and salt until well combined; set aside for later use.

3. In a separate bowl, mix together bananas, melted chocolate, butter, sugar, sour cream, eggs, and vanilla extract until well combined.

4. Pour this mixture over the dry ingredients in the large bowl and fold together quickly with a rubber spatula. The batter will be thin.

5. Divide the cake batter evenly between the two prepared cake pans and smooth the surface with a rubber spatula. Bake for 35 to 40 minutes or until a toothpick inserted into the center of each cake comes out clean.
